Cooking with Wyder's Cider

Apple-Cider braised pork chops with Fennel and Apple

Ingredients

Pork chop Rub:

2-4 Double thick pork chops
1/2 bunch of thyme de-stemmed
a few sprigs of lemon thyme (if available)
a few leaves of mint
2 cloves garlic
2 tablespoons sherry vinegar
3 tablespoons olive oil
3 generous tablespoons of your favorite mustard (a grainy dijon is good)
1.5 teaspoons salt
1 teaspoon freshly ground black pepper

Braising liquid:

1 large fuji apple
1 fennel bulb
1 yellow onion
2 tablespoons olive oil
1 22 ounce bottle Wyder's apple cider @ room temperature
Salt and Pepper to taste

 

Procedure

Preheat oven to 300 F degrees.

1. For the Rub: Chop the herbs, mince the garlic and combine with the mustard, olive oil, salt, pepper and vinegar in a bowl.  Stir until ingredients are well incorporated.  Place pork chop rub in a 1-gallon zip lock bag with the pork chops making sure the rub is covering all pork chops.  Leave in the refrigerator for at least one hour, and up to 24 hours. 

2.  Slice the fuji apple into thin (1/2 centimeter) crescents, Roughly chop the fennel bulb and the onion, then set aside. 

3.  Remove pork chops from bag and scrape off as much of the spice-rub as possible, then pat them dry with paper towels.

3.  In a heavy-bottomed, oven-safe, deep pan heat the two tablespoons of oil until the oil is just smoking and put pork chops into pan.  Thoroughly brown the pork chops on all sides (I cannot stress how important this is) and then remove pork chops from pan. 

4.  Add more oil if necessary and saute the apple slices, the fennel and the onion until golden brown. 

5.  Return pork chops to pan and pour in the full bottle of Wyders apple cider into the pan.  Put on the lid and put in oven.  Cook for about one hour or until the pork chops have an internal temperature of 135 degrees.

6.  Remove pork chops from pan to cool, then place pan on burner and reduce the braising liquid by 2/3.  Pour reduced sauce over pork chops and serve.

Savory Cider Simmered Chicken

Prep time: 10 minutes / Cooking time: 40 minutes
Serves: 2 - 4 persons

One 22 oz bottle or two 11.5 oz bottles Wyder's Apple or Pear Cider
4 boneless/skinless chicken breasts
2 thick slices smoked bacon, chopped
salt and pepper
1 red onion, peeled and chopped
2 tbsp unsalted butter
1 tbsp olive oil
2 garlic cloves, peeled and crushed
1 apple or pear, peeled and chopped
2 carrots or zucchini, chopped (optional)


Generously season chicken breasts with salt and pepper, set aside. In a large skillet, sauté bacon over medium heat for 2 minutes. Add chopped onion. Continue to sauté, stirring constantly until onion begins to soften. Remove from skillet and set aside. Add butter and olive oil to skillet, melt, and then add chicken breasts. Turn up heat to high and brown chicken, 2 minutes per side. Remove chicken and set aside. Immediately pour enough cider into skillet to cover the bottom, and using a wooden spatula, scrape up any remaining tidbits from the bottom. Put chicken breasts back in to the pan, cover with bacon and onions, chopped fruit and garlic and pour in remaining cider. Bring to a boil, then lower heat to medium/low and cover. Simmer for 30 minutes or until chicken is cooked through. Delicious served over rice or pasta. (Add chopped carrots or zucchini during the final 15 minutes of simmer for a complete, balanced meal!) Serve with a cold Wyder's Cider.

 

Artichokes with Cider

Prep time: 15 minutes / Cooking time: 45 minutes
Serves: 4 persons (side dish or first course)

One 22 oz bottle or two 11.5 oz bottles Wyder's Apple or Pear Cider
12 baby artichokes
1 tbsp. olive oil
2 onions (red or sweet)
1 branch fresh parsley
1 branch fresh thyme
1 bay leaf
salt & pepper


Peel, halve and thinly slice onions. Remove stems and any sharp points from artichokes with kitchen shears, then cut into quarters. In medium sized pan, lightly brown onions in oil. Add artichokes then fresh herbs. Season with salt and pepper, then cover with cider. Simmer over medium/low heat for about 45 minutes, or until artichokes are tender. When artichokes are cooked, remove from pan along with the onions. Reduce remaining sauce if necessary to thicken. Readjust seasoning with salt and pepper and pour over artichokes. If serving as a first course, artichokes and onions are delicious served over thin slices of proscutto or pancetta. Serve with a cold Wyder's Cider.

 

Cider Scallops in Shallot Cream Sauce

Prep time: 10 minutes / Cooking time: 10-15 minutes
Serves: 4 persons

One chilled 22 oz bottle or two 11.5 oz bottles Wyder's Apple or Pear Cider
2 lbs. sea scallops
1/2 cup heavy cream
2 tbsp butter
3 whole shallots, peeled and finely chopped
2 tsp. potato starch (optional)
juice from one lemon
salt & pepper


In a large flat bottomed pan, sauté shallots in butter over medium heat until clear, not browned. Add 1/2 of the 22 oz. bottle of cider and lightly season with salt and pepper. (Pour other 1/2 of cider in a tall glass and enjoy!) Simmer for 6-8 minutes. Add scallops and cook quickly, approx. 2-3 minutes on each side - do not overcook! Remove scallops from pan, set aside. Combine cream and starch, then add to pan. Bring to a boil, reduce heat to a simmer and add lemon juice. Simmer for 2-3 minutes or until sauce thickens Check and adjust seasoning if necessary. To serve, pour sauce over scallops. Excellent when accompanied by boiled potatoes or fresh pasta.

 

Hot Mulled Wyder's Cider

Prep time: 5 minutes / Cooking time: 20 minutes

Serves: 2-4 adults

One 22 oz bottle of Wyder's Apple Cider
2 whole cloves
2 cinnamon sticks
1 large strip of orange zest
1 apple - peeled, cored and sliced
1 tbsp sugar
2-3 drops vanilla extract


Combine all ingredients in a heavy saucepan over low heat. When the sweet smell of apples and spice has filled your home, mulled Wyder's Cider is ready to be enjoyed. Remove cloves, orange zest. Serve in mugs with the apples and cinnamon sticks.
